The Best Yorkshire Pudding Recipe

A Sunday roast simply isn’t complete without the humble Yorkshire Pudding. The best pud has a crispy outside and chewy middle – culinary perfection!

This recipe is from the well-loved chef Jamie Oliver, so you know it’s a good one.

  • Sunflower oil (or another cooking oil with a high smoke point)
  • 4 free-range eggs
  • 200g plain flour
  • 200ml whole milk
  • Pinch of salt


  • Preheat the oven to 190°C/370°F
  • Crack the eggs into a large mixing bowl and whisk together.
  • Whisk in the milk.
  • Sieve in the flour and whisk it all together.
  • Once mixed, add a pinch of salt and whisk again. When there are no lumps on the back of a spoon, the mixture is ready.
  • Pour the mixture into a jug.
  • Pour 1cm of oil into an edge row of 3 cups in the muffin tray. 
  • Gently tip the tray so the oil pours into the remaining cups in the muffin tray. Set the tray down again when all cups have an even amount of oil in them.
  • Put the muffin tray into the oven for 15 minutes or until piping hot.
  • Take the muffin tray out and pour the batter into each cup. Place a teaspoon underneath the jug between each pour, so any drops of batter fall onto the spoon rather than the tray. 
  • Put the tray into the oven and cook for 20-25 minutes until golden and crispy.
  • Do not open the oven door until the Yorkshire puddings are cooked. Be sure to not put anything else in the oven while the puddings are cooking.
  • Once cooked, take the puddings out and leave to cool on a wire rack.

  • Sieve
  • 12 cup muffin tray
  • Weighing scales
  • Large mixing bowl (the large size helps to get air in the batter when whisking)
  • Pouring jug
  • Balloon whisk
  • Teaspoon

Alternative Recipes

Of course, there are many other Yorkshire pudding recipes out there that you may prefer, depending on your personal preference.

In Marco Pierre White’s recipe, pepper is added to the mixture as well as salt, to taste. He also has an onion gravy recipe, which he says pairs well with his Yorkshire puddings. You can find both recipes here.

As for Mary Berry, she adds more eggs and less milk in her recipe. If using full-fat milk in her recipe, replace a quarter of the milk with water. You can check out her recipe here.
