Slow Cooked Beef Casserole

If you want a recipe to please the whole family then try this traditional beef casserole, slow cooked for a guaranteed tender dish that is sure to please everyone.

(4 Hours Cooking Time, Serves 5)

Ingredients

2 Celery Sticks
1 Chopped Onion
2 Big Carrots
5 Bay Leaves
3 Thyme Sprigs
1tbsp Vegetable Oil
1tbsp butter
2tbsp Plain Flour
2 tbsp Tomato Puree
2 tbsp Worcestershire Sauce
2 Beef Stock Cubes
850g Stewing Beef

 

Method

1. Heat the oven to 160oC/ 140oC fan / gas 3 and put the kettle on to boil. Add the celery, onion, carrots, bay leaves, thyme sprig into your casserole dish with 1tbsp of butter and vegetable oil. Let the vegetables soften for 10 minutes then add the flour until it doesn’t look dusty anymore. Now add the tomato puree, Worcestershire sauce and beef stock cubes.

2. Stir in 600ml of boiling water gradually, add the beef and bring it to a gentle simmer. Cover the dish and place in the oven for 2hrs 30 minutes. Uncover the dish and cook for a further 1 hour 30 minutes to get the meat really tender, and so the sauce can thicken.
